Thanks in large part to their breeders pigs today are more meager offering consumers a quality meat with low fat content. Pork production has evolved to meet the growing and changing consumer demands for more healthful meat and without much fat. Curious fact: In 1937, big part of pigs were used to produce pork lard. Today, lean meat replaces much of that fat. The current producers combine genetics with better production techniques and technology to deliver the amount of lean meat that consumers demand.

Today, 6 out of the common cuts of pork are 16% more meager than 15 years ago and saturated fat has been reduced by 27%.
