
Ingredients:
1 kilo of pork leg SASA
1 small onion
5 bay leaves
Salt and pepper to taste
7 guajillo chili
1 tablespoon lard SASA
2 cloves garlic
1/4 teaspoon cumin
1/4 teaspoon oregano
1/4 teaspoon thyme
Preparation:
-Place The meat in a medium saucepan and cover with water. Add onion, bay leaf, salt and pepper. Heat over high heat until it begins to boil. Reduce heat to low, cover and cook until meat is cooked but still firm, about 40 minutes.
-While, Soak the chiles in boiling water until tender, about 30 minutes.
When the meat has been cooked, drain well and discard the onion and bay leaf. Heat the butter in a saucepan over medium-high heat and fry the meat until it has browned slightly.
-Blend Chilies along with garlic, spices, salt, pepper and a little water. Strain on the fried meat and mix well. Cook over medium-low heat, stirring occasionally, until the meat is very soft.
